Receta de Hallacas Venezolanas/Paso a Paso

With much love I give you the recipe for Hallacas that my mother taught me step by step. It is the Hallaca of Caracas and in the style of my dear mother. I hope it is useful and you enjoy it. Merry Christmas 2025 Ingredients: For approx 30 Hallacas Broth: 1 whole chicken in pieces 1 onion half a red pepper 1 carrot 1 leek 5 sweet peppers parsley sprigs 3 cloves of garlic salt to taste Annatto oil: 6 tbsp lard 2 tbsp annatto 2 to 2.5 kg of banana leaves Stew: 1 kg of pork 1 kg of beef for stewing boiled chicken meat 4 large onions 4 scallions 1 large leek 1 cup of pickles 2 heaping tablespoons of capers 1 glass of sweet wine 4 tbsp garlic 5 sweet peppers 1 red pepper half a cup of raisins 2 tbsp Worcestershire sauce 1 tbsp red wine vinegar 2 tsp sweet paprika salt to taste 5 tbsp annatto oil chicken broth Dough: 2 to 2.5 kg precooked corn flour salt to taste annatto oil to color chicken broth
