Place the spinach on a work surface and coarsely chop. Then, squeeze to remove excess water and place in a bowl. Add the chopped onion, cheese, butter, one egg, nutmeg, black pepper, and salt to taste to the spinach and mix well until the mixture forms a dough-like consistency with the breadcrumbs. Form large balls and refrigerate for 20 minutes (covered with a dish towel). For breading: Lightly beat an egg, dip the spinach balls in the beaten egg, and then coat them in breadcrumbs. In a frying pan, heat oil for deep frying until hot and fry the spinach balls until golden brown. Using a slotted spoon, remove from the oil and let drain well.
