Today's video is a close look at the No.1 eel restaurant in Japan, "Osakayama Kaneyo", founded in 1872. I was able to capture a lot of valuable Japanese craftsmanship in the atmosphere of a long-established restaurant, such as how to handle eel, carp, and eel kabayaki. When I was a little, I didn't really like eel, but when I was in high school, I visited "Osakayama Kaneyo" for the first time to celebrate my grandfather's recovery, and for the first time in my life, I was impressed by how delicious eel dishes are! The craftsman who was the head chef at that time is now the president of the restaurant (the black-clad craftsman), and he told us many stories about that time and the history of the restaurant, and we enjoyed an emotive time full of memories. I admired the attitude of the president and the craftsmen who kept the atmosphere of the garden and the store as it was, and kept the same old taste of the restaurant, and made an effort to live up to the name of the No.1 eel in Japan.
