Luscious Lemon Lush - Easy Lemon Pie

Delicious lemon dessert for your family -- easy to make. A bright, flavorful pie with a cream cheese layer and easy cookie crust. For the cookie crust: 1 cup flour (128 g) 1/2 cup pecan pieces (62.5 g) 1/2 cup softened butter (115 g) Mix together in bowl and spread into pie pan. Bake for 20 minutes in a 350 degree oven. For the lemon center: Follow the directions on a package of cook and serve lemon pudding. Add juice of 1 lemon at the end. Stir and let cool. Alternatively, you may cook your own lemon curd and use that. For the cream cheese filling: 1 cup powdered sugar, sifted (125 g) 8 oz. of softened cream cheese (225 g) 1 tsp. vanilla extract 1 cup Cool Whip (60 g) Mix sugar and cream cheese until blended. Stir in vanilla and Cool Whip. On cooled cookie crust, spread the cream cheese mixture followed by the layer of lemon pudding. Top with Cool Whip. Refrigerate at least 4 hours. Enjoy!
