TODAY'S APPOINTMENT, DEDICATED TO THE EASTER SEASON, WITH ANOTHER SUPER-TYPICAL AND TRADITIONAL CALABRESE EASTER RECIPE, A CLASSIC CALABRESE SWEET WITH YEARS OF HISTORY... CUZZUPE, BISCUIT VERSION Today I'm making another typical and historic Calabrian Easter dessert for you: cuzzupe, as I mentioned. This one I'm making today is a Cuzzupa recipe, which is another variation on the brioche version. It has a more biscuity texture and is decorated with colored sprinkles, as well as the ever-present eggs. Here's how: First boil the eggs, as many as you like. Now prepare the dough and add the grated peel to the sifted flour and mix. Now add the sugar and mix. Then add the eggs, ammonia, and milk (dissolve the ammonia first). (in the milk), the oil, and the orange juice... now let's start kneading. When everything starts to come together, add the salt and vanilla and continue kneading by hand. Now, let's finish the dough on a pastry board or work surface. When it's nice and smooth, let's start preparing the cuzzupe. Cut off a bit of dough and create the desired shape... braided, in a figure 8, a basket, or whatever you like. When the shapes are ready, add at least 1 egg to each cuzzupa and secure it by braiding strips of dough onto it. When all are ready, place them on a baking sheet lined with parchment paper, then brush them with egg yolks and distribute the pralines on top.
