Today on the ✨ABC✨ bakery @xime showed us how to make a ✨🍋LEMON PIE🍋✨ with an exquisite meringue prepared by @lucianogarcia. . 🍋INGREDIENTS: For the dough: 0000 flour, 300 g. Butter, 200 g. Sugar, 100 g. Egg yolk, 1 unit. Salt. For the filling: Egg yolk, 4 units. Milk, 1/2 liter. Lemon juice, 200 cm3. Sugar, 200 g. Cornstarch, 60 g. Butter, 1 tbsp. Lemon zest. For the topping: Egg whites, 5 units. 300 g sugar 100 ml water . 🍋PROCEDURE: 1.⚡For the dough: Beat the softened butter with the sugar. Add the egg yolk and vanilla extract. Once well emulsified, add the flour. Mix quickly and chill. . ✨Xime's tips: The butter must be softened, not melted. Don't overwork the dough, and place it in the oven chilled. . 🍋Xime used @liliana's mixer, which works wonders! 😉 2.⚡Roll out the dough and line a springform pan. Bake, pierced with a fork, for 15 minutes in a moderate oven, until fully cooked. 3.⚡For the filling: Heat the milk with half the sugar. 4. In a bowl, mix the remaining sugar with the cornstarch. Mix well and add the egg yolks, lemon juice, and zest. Once combined, add the hot milk and bring everything to a boil, stirring constantly. Cook until boiling for one minute and remove from heat. Add the butter and cover with plastic wrap. 5. Once the lemon curd has cooled, cover the pie crust. 6. Make an Italian meringue with the leftover egg whites and cover with the cream. Blowtorch and it's ready. . ✨Lucho's Tip: For the meringue, the egg whites should be perfectly broken, clean and free of any yolks. Start beating the egg whites when the syrup is almost ready. Beat the meringue.
