Autumn dream salad 🥗🍁 - pumpkin 🎃, beets 💜 and cottage cheese 🧡 Ingredients: Pumpkin (firm part) - 350 g 🎃 Large, sweet beets (boiled or baked) - 1 pc. 💜 Curd cheese - 300 g 🧀 Broccoli - 100 g 🥦 Mixed greens (arugula and salad leaves) - 100 g 🌿 Roasted walnuts - 25 g 🥜 Pumpkin marinade: Apple cider vinegar - 2 tbsp 🍎 Olive oil - 1 tbsp 🫒 Salt - ½ tsp. 🧂 Honey - 1 tbsp 🍯 Sauce: Orange juice - 2 tbsp 🍊 Lemon juice - 1 tsp. 🍋 Olive oil - 1 tbsp. Salt - ½ tsp 🧂 Grainy mustard - 1 tsp. Honey - 1 tsp 🍯 Balsamic sauce - a little, optional To serve: 25×25 cm square platter Step-by-step recipe: 1) Prepare the pumpkin: peel and cut into thin slices. Pour boiling water for 1 minute, drain; if desired, rinse with cold water and dry. 2) Marinade: Mix apple cider vinegar, salt, olive oil and honey. Pour the marinade over the pumpkin, stir and leave to soak while you prepare the rest. 3) Beets: slice the boiled or roasted beets into thin slices. Place on a paper towel to remove excess moisture. 4) Cheese: place the cottage cheese in a pastry bag (or heavy bag), cut off the corner. 5) Beet rolls: place a little cheese on the edge of the beet plate and roll up. Fold the rolls, cover with foil and store in the refrigerator. 6) Pumpkin rolls: take the pumpkin out of the marinade, drain the liquid and blot the plates. Place cheese on the edge and roll up. Cover with foil and place in the refrigerator. 7) Broccoli: cut into small florets, boil in salted water for 2 minutes, then drain. 🥦 8) Nuts: chop the pre-roasted walnuts. 🥜 9) Sauce: mix orange and lemon juice, olive oil, salt, grainy mustard and honey until smooth. 10) Greens: rinse and dry. Pour a little of the sauce and, without mixing, arrange the greens on a 25×25 cm dish. 🌿 11) Assembly: arrange the beet rolls on one side and the pumpkin rolls on the other. Add broccoli florets. 12) Serving: drizzle with remaining sauce, add a little balsamic sauce if desired. Sprinkle with nuts and serve.
