Be sure to try both versions and let us know in the comments which one you liked best 😋 Ingredients Zucchini Rolls: 🥒 Young zucchini — 3 pieces, about 270 g each 🧂 Salt — to taste 🥩 Ground pork — 400 g 🌶 Smoked paprika — to taste ⚫ Ground black pepper — to taste 🌿 Italian herbs — to taste 🥛 Sour cream — 40 g 🧄 Garlic — 2 cloves 🧀 Hard cheese — 120 g For breading: 🍞 Panko breadcrumbs — 80 g 🧂 Salt — 1/2 tsp 🧄 Dried garlic — 1/2 tsp 🌶 Smoked paprika — 1 tsp 🧀 Hard cheese — 30 g 🥚 Eggs — 2 🌾 Flour — 100 g 🥬 Lettuce leaves — for serving Zucchini Tacos, 4 pieces: 🥒 Young zucchini — 1 piece (approx. 370 g) 🧂 Salt — to taste 🧀 Hard cheese — 150 g 🍞 Panko breadcrumbs — a small amount, as desired Taco filling: 🍅 Tomatoes 🥬 Lettuce leaves 🥓 Ham 🧀 Hard cheese 🥑 Avocado 🍋 Lemon juice Preparation Zucchini Rolls: 1. Slice the young zucchini into thin strips using a knife or a special grater. 2. Arrange the zucchini in layers, sprinkling each layer lightly with salt. Let sit for about 15 minutes to allow the zucchini to soften and release their juices. 3. For the filling, combine the ground pork, salt, black pepper, smoked paprika, Italian herbs, sour cream, and grated garlic. 4. Cut the hard cheese into small cubes. 5. Drain the liquid from the zucchini. Then place the slices on a paper towel and pat them dry. 6. Place a small amount of ground meat and a cube of cheese on each zucchini slice. Press the ground meat down gently so the cheese is enclosed inside, then roll it up. 7. For the breading, mix together panko breadcrumbs, salt, dried garlic, smoked paprika, and grated cheese. 8. In a separate bowl, lightly beat the eggs. In another bowl, add the flour. 9. Coat each roll in flour, then dip it in egg and coat it in breadcrumbs. 10. Place the rolls on a baking sheet lined with parchment paper. 11. Bake in a preheated oven at 200°C for about 20–25 minutes, until golden brown. 12. Let the rolls sit for a few minutes, then serve them with lettuce leaves. Zucchini Tacos: 1. Slice the zucchini into thin rounds using a special grater. 2. Arrange the slices in layers, sprinkle lightly with salt, and let sit for about 15 minutes. 3. Drain off any excess liquid and pat the zucchini dry with a paper towel. 4. Grate the hard cheese using a coarse grater. 5. Place 4 cheese rounds on a baking sheet lined with parchment paper—these will serve as the bases for the tacos. 6. Place the zucchini on each cheese base, arranging them to form a neat flower. 7. Sprinkle grated cheese on top. If desired, add a little of the remaining panko breadcrumb mixture. 8. Bake in a preheated oven at 190°C for about 18–20 minutes, until golden brown. 9. Remove the pastries and let them sit for about 5 minutes. After that, they’ll come off the parchment easily and roll up nicely. 10. For the filling, slice the tomatoes, avocado, ham, and cheese. Drizzle the avocado with lemon juice. 11. Place a lettuce leaf, ham, avocado, tomatoes, and cheese on each tortilla. Gently roll up the taco. Enjoy your meal! 🥒🧀😋
