Ingredients for cooking pasta: 6 cups water 1 1/2 tsp salt 1 tbsp cooking oil 1 cup penne pasta Ingredients for cooking chicken: 1 tbsp cooking oil 150 gram boneless chicken 1/4 tsp black pepper powder 1/4 tsp salt to taste Ingredients for white sauce: 1 1/2 tbsp butter 1 nos. onion small (45g) 3 nos. garlic cloves 1 1/2 tbsp all purpose flour 1 1/2 cup full cream milk 1/4 tsp black pepper powder Salt to taste (1/4 tsp) 1 tbsp chilli flakes 2 nos. cheddar cheese slice Directions: On a pot on medium to high flame add 6 cups water, salt and cooking oil. Bring it to a boil. Once it starts boiling add pasta, give a quick stir, put the lid on and cook for 9-12 mins. Cooking time varies depending on the type and brand of pasta. Cut the pasta in half or eat it to check if pasta is cooked. It will be little bit firm to bite with a very faint white lining. Once cooked, strain the pasta and set it aside in a bowl. Finely chop the onion and garlic cloves. Cut chicken into 1/2 inch cubes. You can cut them as the pasta is cooking or before that. On a pot on high heat, add oil, chicken pieces, black pepper powder, salt to taste. While stiring frequently cook chicken pieces for 3-5 mins. Set it aside once done. On the same pot, add butter (1 tbsp), chopped onion and garlic. Turn the heat low to medium and cook till lightly golden browned. Takes 2-3 mins. Add flour and mix well for 1-2 mins. P.S I added 1/2 tbsp more butter at this stage after adding the flour. I could not show it in the video. In total I added 1 1/2 tbsp butter. Gradually add milk. Approximately 1/4 cups at a time. Stir and add more milk as the sauce thickens. After adding around half of the milk, add black pepper powder, salt to taste and chilli flakes. Mix and add more milk. Add cooked chicken pieces, cooked pasta, cheddar cheese slices and mix. Add the rest of the milk and cook it to your desired consistency. Keep in mind to stir frequently and that the sauce will thicken very quickly and it will thicken further, even after the heat is turned off. Serve immediately and enjoy.
