At Soroush Mediterranean Restaurant they do Koobideh kebabs and I might be totally miss-pronouncing it because it was the first time I saw the word. What this means is that it is traditionally persian, it is made from beef, lamb or chicken these days, and the meat is ground and then mixed with salt, pepper and grated onion. Sometimes spice are also added and sometimes eggs to help bind everything together. The name actually comes from a word that means pounding, since the meat was traditionally pounded up.
