A few years ago, Palace Station did something quietly revolutionary. Instead of chasing celebrity chefs with big names and even bigger prices they went back to their roots as the casino for Las Vegas locals and visitors in the know. They asked: Where do locals like to eat? They retained their famous oyster bar and the always underrated Brass Fork and added 2 local favorites: Lindo Michoacan and China Mama. If you do not recognize either of these names, I am pulling your Vegas Local card. Both have been favorites in the valley for years, if not decades.
