Garlic and Parmesan Hasselback Potatoes

Recipe 4 baking potatoes (I use Russet) 1/4 cup softened butter 1/3 cup Parmesan cheese 1 teaspoon parsley 1 teaspoon oregano 2-3 cloves garlic, minced salt and pepper to taste 1. Hasselback cut potatoes. 2. Combine remaining ingredients in a small bowl. 3. Stuff the butter mixture into the slits in the potato. 4. Place in casserole dish that has been drizzled with olive oil. 5. Bake at 400 degrees for 45 minutes. If you are pressed for time, simply microwave the potatoes for 5 - 10 minutes first, then transfer to the oven and cook until golden brown.
