茶香熏鴨 Tea Smoked Duck made with simple ingredients

A delicious smoked duck recipe made with simple ingredients and smoked on stove top. You will need: 1 large pan with a lid 2 duck breasts Marinade: 1 TBS Kosher salt 2 TBS Sichuan peppercorn 2 TBS Shaoxing wine or any cooking wines Smoke ingredients: 1/2 c rice (any type) 1/2 c tea leaves (red, green, or black) 1/2 c brown sugar, packed 4-5 star anise Handful of your favorite wood chips (optional) Dried orange peel (optional) Directions: 1) wash, pat dry, then rub cooking wine evenly over the duck 2) mix kosher salt and peppercorns together 3) rub the mixture evenly onto the duck then put it in a zip lock bag to marinade 4) let it marinate in the refrigerator for 12 hours 5) wash off the marinade then pat dry 6) place the duck on a roasting pan and rack, skin side up and put it back in the refrigerator overnight to let the skin dry Prepare to smoke: 1) use heavy aluminum foil to cover the bottom of the pan and also all around its lid 2) make a small bowl out of foil and put the smoke ingredients inside the bowl 3) place the bowl in the middle of the pan then put a rack over the bowl 4) place the duck on the rack, skin side up 5) put the lid on the pan making sure to wrap foil around the pan to form a tight seal 6) put the pan on the stove and turn the heat on high 7) when you see smoke from the pan, turn the heat to medium and let it smoke for 20 minutes Crispy skin: Place the smoked duck in a preheated pan over medium high heat, skin side down and pan fry the skin till it’s lightly crisp. Careful not to burn the skin. Note: no need to add oil to the pan because the skin of the duck has enough fat for it to fry in its own oil to crisp up. Ideas for serving: Serve the smoked duck with plain steamed buns or with wraps used for moo shu. This recipe makes 3-4 servings. #SmokedDuck, #TeaSmokedDuck, #茶香熏鴨 #媽媽的味道 #自炊 #簡單料理 #家庭小菜
