Greek Fava Recipe with only 5 ingredients Fava: Green and yellow split peas: 250 g Red onion: 1 piece Olive oil: 4 cl Fresh thyme: 4 sprigs Roasted split peas: Olive oil: 4 cl Fresh thyme: 4 sprigs To serve: Red onion: 1 piece Capers: 40 g 1/ The Fava: The night before, soak the split peas in plenty of water overnight. The next day, drain and rinse the split peas. Peel and finely chop the onion and sauté it in a saucepan with olive oil and thyme for 3 minutes. Add the split peas and cover with water. Bring to a boil, then reduce the heat to a simmer. Cover and cook for 45 minutes. Set aside 50g of split peas for the next step and blend the rest with an immersion blender until smooth, reserving the cooking liquid. Set aside. 2/ Roasted Split Peas: Preheat the oven to 200°C (390°F). Thoroughly dry the cooked split peas. Spread them on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with thyme. Bake at 200°C (390°F) for 20 minutes. 3/ Plating: Peel and slice the red onion into petals. Spread the fava beans on the bottom of a large plate and drizzle with olive oil. Scatter over roasted split peas, red onion petals, and capers. Enjoy!
