ALBÓNDIGAS VEGANAS | Living Like A Panda

This dish is a classic: spaghetti with meatballs, but these #veganas meatballs can be eaten with whatever you want: with mashed potatoes, with rice and even in a snack. They come out delicious, too yummy. It is a cheap and nutritious recipe and on top of that it pa for the whole week and the dough can be used for hamburgers and sausages #vegan too. So do not hesitate to check the ingredients and step by step in the video and here below: INGREDIENTS OF THE ALBÓNDIGAS: 2 cloves of garlic 1 red onion 150 g mushrooms / mushrooms 30 g of nuts 2 tbsp EVOO 1 tsp soy sauce / tamari 2 tbsp tomato concentrate 1 oregano tsp 1 tsp thyme 1/2 tsp paprika from La Vera 1/8 tsp ground black pepper 1 tsp salt 400 g cooked and drained lentils 200 g ground oats INGREDIENTS OF THE SAUCE: 3 garlic cloves 2 tbsp EVOO 800 g crushed tomato 1 handful of fresh basil 1 tsp salt We start making the meatballs:  · Heat 2 tbsp of EVOO (extra virgin olive oil) in a pan and brown the crushed garlic cloves.  · Add the onion in strips and let it poach for 5-10 minutes.  · Add the chopped mushrooms / mushrooms, chopped walnuts (we escaped them with our hands), spices, soy sauce (if you want gluten free use tamari sauce) and tomato puree. Mix well and let it cook for about 10 minutes.  · Remove and put it in a large and deep bowl (which allows you to crush)  · Add the cooked lentils, washed and drained.  · Crush until you have a homogeneous mixture, but if there are areas without crushing do not worry, it will give more texture to the meatballs  · Gradually add the crushed oat flakes and mix. (If you don't have oatmeal, simply crush some oatmeal flakes until they are dusted)  · You will have a homogeneous mixture that does not stick to your hands, ready to make balls.  · Prepare a container with baking paper or, if you don't have one, use a glass one with a little olive oil in the bottom so that they do not stick.  · Make balls with your hands. He gave us about 24 meatballs, but everything will depend on the size of them xD  · Bake for about 20 minutes at 180 ° C or until you see them golden brown.  · While we are going to make THE SAUCE: Heat in a pan 2 tbsp EVOO.  · Brown the garlic cloves and then add the crushed tomato, chopped fresh basil and salt. Cook for 20 minutes to integrate the flavors.  · It only remains to put the meatballs in the sauce and mix well so that everything is super rich. The meatballs will be golden and crispy on the outside but rich and meaty on the inside ^^ We hope you liked it!
