SALSA QUESO CHEDDAR VEGANO | Living Like A Panda

Hi! Today we're bringing you something savory that's finger-licking good, or rather, perfect for dipping with bread or nachos. It's a very tasty and super healthy vegan cheddar cheese sauce. It's almost entirely made with vegetables, and no, it doesn't taste like stew! INGREDIENTS: 1 sweet potato (330 g) 1 large potato (340 g) 2 large carrots (180 g) 50 g cashews 3 cloves of garlic 120 ml unsweetened soy milk 3 tbsp nutritional yeast 1 tsp miso paste 1/4 tsp smoked paprika 1 tbsp apple cider vinegar 1 tbsp lemon juice 1 tsp Himalayan pink salt Peel and dice the sweet potato, potato, carrots, and garlic. Place them in a pot along with the cashews and cover with water. Heat over medium heat and simmer until the carrots are tender when pierced with a fork. Drain and let cool for 10 minutes. Place in a blender and add the plant-based milk, nutritional yeast, miso paste, paprika, vinegar, lemon juice, and salt. Blend until smooth. You can eat it as is, but we love it cold! Enjoy!
