SAMOSAS VEGETALES | Living Like A Panda

INGREDIENTS: Mass: 250 g of wheat flour 1 teaspoon salt 60 ml of EVOO 100 ml of water Stuffed: 400 g of potatoes 1 white onion (150g) 2 garlic cloves 1 chunk of fresh ginger (15g) 1 handful of fresh coriander 2 tablespoons EVOO 1 tablespoon curry powder 1/2 teaspoon ground cumin 1/2 teaspoon ground turmeric 1/4 teaspoon sweet paprika 1/8 teaspoon ground black pepper 1 teaspoon salt · We start by making the dough, simply mixing the ingredients with a fork in a deep bowl. · When you can no longer mix with your hands until you have a uniform dough. · Transfer the dough to a floured board and knead for a minute, until smooth. · Roll the dough into a ball, put it back in the bowl and refrigerate in the fridge for 30 minutes. · While we are going to make the filling: Peel and dice the potatoes. We are going to steam them but if you want you can cook them. In this way, we take less water and make it faster. · In a frying pan, heat the EVOO and brown the crushed garlic cloves. · Add the ginger and chopped onion and cook for 5 minutes. · Add the spices and salt and cook another 5 minutes. · Add the peas and potatoes. Stir a little and add the chopped cilantro. · Cook another 5 minutes and skim the potatoes a little, without mashing it. Reservation. · Take out the dough and cut it into 6 almost equal pieces. · Make a ball with each piece and roll the dough in a circular shape with a rolling pin, about the size of your hand. · Cut the dough in half, and roll each half into a cone. Press the edges well so that they stick and the filling does not come out later. · Take the opportunity to preheat the oven to 180ºC. · Fill each cone with 1 tablespoon of the spiced potato filling and close the missing end, squeezing with your fingers. · Place the samosas on a baking tray lined with greaseproof paper. · Brush each samosa with a little EVOO and bake at 180ºC for about 30 minutes or until golden brown. · Let warm before eating and enjoy. · We eat them by dipping them in vegetable spreadable tofu cheese (   • QUESO CREMA VEGANO a las FINAS HIERBAS | L...  ) or with chutney.
