Paneer mixture stuffed in wheat flour pockets and shallow fried. JAIN PANEER LIFAFA Ingredients 250 grams cottage cheese (paneer), grated Whole wheat flour dough as required 1 tablespoon oil + for shallow-frying 1 medium green capsicum, finely chopped 1 medium red capsicum, finely chopped 1 medium yellow capsicum, finely chopped Salt to taste 1 teaspoon red chilli flakes 2 teaspoons dried mixed herbs 1 teaspoon red chilli powder ¼ cup corn kernels, boiled and crushed 1 tablespoon refined flour Method 1. Divide the dough into equal portions. Shape into balls, flatten and roll out into rotis. Half-cook rotis on non-stick tawa. 2. Heat 1 tablespoon oil in non-stick pan. Add green, red, yellow capsicum and sauté well. Add salt, chilli flakes, mixed herbs, red chilli powder, corn kernels and mix well. Add cottage cheese and mix well. Cook on low heat for 2-3 minutes, switch off the heat and set aside. 3. Combine refined flour and sufficient water to make a smooth slurry. 4. Place a spoonful of the cottage cheese mixture on the roti, apply the flour slurry on the edges and make a pocket (lifafa), sealing the sides. Similarly prepare the rest. 5. Heat some oil on a non-stick tawa. Shallow-fry the lifafas till evenly done from all sides. 6. Serve hot with tomato ketchup.
