From Cannes to My Kitchen | Crispy Onion Crackers You'll Love
Some recipes remind you of a place. This one takes me back to the French Riviera. Today I'm sharing one of my favorite savory bakes - buttery onion crackers with Parmesan and herbs. They're crispy on the outside, tender inside, and perfect for serving with cheese, dips, or simply enjoying with a cup of tea. While these crackers bake, I'll also take you along through a few cinematic moments from Cannes, where every street seems to inspire new recipes and new stories. Ingredients: 1 small onion A little oil for frying 150 g all-purpose flour 100 g cold unsalted butter 50 g grated Parmesan 1/2 tsp salt A pinch of black pepper 1/2 tsp dried thyme 1/2 tsp dried oregano 1/4 tsp dried rosemary 1 egg Instructions: 1. Finely dice the onion. 2. Cook it in a small amount of oil over medium heat until soft and translucent. Let it cool completely. 3. In a bowl, combine the flour, cold diced butter, grated Parmesan, salt, pepper, thyme, oregano, and rosemary. 4. Add the cooled onion and the egg. 5. Mix until a soft dough forms. 6. Shape the dough into a log about 4 cm (1½ inches) in diameter. 7. Wrap it in plastic wrap and refrigerate for 30 minutes. 8. Preheat the oven to 180°C (355°F). 9. Slice the dough into rounds about 1 cm thick. 10. Arrange on a baking tray lined with parchment paper. 11. Bake for 12–15 minutes, or until lightly golden.
