FULL RECIPE Ingredients 1 cup sweet corn kernels 1 cup semolina (suji) ½ cup plain yogurt ¼ cup rice flour ½ cup water (adjust as needed) 1 medium onion, finely chopped 2 green chilies, finely chopped 1 tablespoon grated ginger 2 tablespoons chopped coriander leaves 8–10 curry leaves, finely chopped ½ teaspoon cumin seeds ½ teaspoon crushed black pepper ½ teaspoon red chili flakes ¼ teaspoon turmeric powder Salt to taste ½ teaspoon fruit salt (or ¼ teaspoon baking soda) Oil for greasing the appe pan METHOD Step 1 Wash the sweet corn thoroughly and drain well. Step 2 Blend half of the corn into a slightly coarse paste. Step 3 Keep the remaining corn kernels whole for added texture. Step 4 In a large bowl, combine semolina and rice flour. Step 5 Add yogurt and mix well. Step 6 Gradually pour in water while stirring to make a smooth batter. Step 7 Add the blended corn paste and whole corn kernels. Step 8 Mix in chopped onion, green chilies, ginger, coriander leaves, and curry leaves. Step 9 Add cumin seeds, black pepper, chili flakes, turmeric, and salt. Step 10 Mix everything thoroughly until well combined. Step 11 Cover the batter and let it rest for 15–20 minutes. Step 12 If the batter becomes too thick, add a little water to adjust the consistency. Step 13 Just before cooking, add fruit salt and gently fold it into the batter. Step 14 Heat the appe pan over medium flame. Step 15 Lightly grease each cavity with oil. Step 16 Fill each cavity about three-fourths full with batter. Step 17 Cover and cook for 3–4 minutes until the bottoms become golden. Step 18 Flip each appe carefully using a skewer or spoon. Step 19 Cook the other side until evenly golden and fully cooked. Step 20 Repeat the process with the remaining batter. Step 21 Serve the hot Corn Appe with coconut chutney, tomato chutney, mint chutney, or tomato ketchup.
