FULL RECIPE Ingredients For the Batter 1 cup raw rice 1 cup fine semolina (suji) ½ cup fresh yogurt 1½ cups water (as required) 2 tablespoons rice flour (optional, for extra crispiness) Vegetables 1 medium onion, finely chopped 1 small carrot, grated ¼ cup capsicum, finely chopped 2 green chilies, finely chopped 1 tablespoon grated ginger 2 tablespoons chopped coriander leaves 8–10 curry leaves, finely chopped Spices 1 teaspoon cumin seeds ½ teaspoon crushed black pepper ½ teaspoon turmeric powder ½ teaspoon red chili flakes Salt to taste For Cooking Oil or ghee as required METHOD Step 1 Wash the rice thoroughly until the water runs clear. Step 2 Soak the rice in fresh water for 3–4 hours. Step 3 Drain the rice completely. Step 4 Transfer the soaked rice to a blender. Step 5 Add yogurt and a little water. Step 6 Blend into a smooth batter. Step 7 Pour the batter into a large mixing bowl. Step 8 Add semolina and mix thoroughly. Step 9 Gradually add water to achieve a smooth pouring consistency. Step 10 Cover the batter and let it rest for 20 minutes. Step 11 Add chopped onion, grated carrot, capsicum, green chilies, ginger, coriander leaves, and curry leaves. Step 12 Mix in cumin seeds, black pepper, turmeric, chili flakes, and salt. Step 13 If required, add rice flour for extra crispiness. Step 14 Heat a non-stick tawa over medium heat. Step 15 Lightly grease the tawa with oil. Step 16 Pour one ladle of batter in the center. Step 17 Spread it gently into a thin circle. Step 18 Drizzle a little oil around the edges. Step 19 Cook until the bottom becomes golden brown. Step 20 Flip carefully and cook the other side until crisp. Step 21 Repeat the same process with the remaining batter. Step 22 Serve hot with green chutney, coconut chutney, tomato chutney, yogurt, pickle, or tomato ketchup.
