Remove the baby back ribs from the package and trim away any hard pockets of fat and loose flap meat. Flip the ribs over, remove the membrane, and discard any excess trimmings. 2. Lightly coat both sides of the ribs with yellow mustard as a binder. Season evenly with Competition BBQ Rub followed by Honey Rub, gently patting the seasonings into the meat. 3. Preheat your smoker to 300°F. Place the ribs in the smoker and cook for about 2 hours, or until the bark has set and passes the smear test. 4. While the ribs smoke, prepare the peanut butter and jelly glaze by combining Sweet BBQ Sauce, honey, soy sauce, Thai Sweet Chili Sauce, creamy peanut butter, and grape jelly in an aluminum foil boat. Whisk the ingredients together, knowing they'll fully combine as they warm. Add a squeeze of lime juice if desired. 5. Once the ribs have developed a deep color, lay each rack on two sheets of foil over about ¼ cup of Butter Bath & Wrap. Wrap the ribs tightly, meat-side down, and return them to the smoker for about 1 hour. 6. Remove the wrapped ribs from the smoker and let them rest in the foil for 15–20 minutes. During the rest, place the peanut butter and jelly glaze on the smoker and whisk occasionally until smooth and glossy. 7. Unwrap the ribs and place them back on the smoker meat-side up. Brush each rack generously with the warm peanut butter and jelly glaze, then cook for 15–20 minutes until the glaze becomes tacky. Apply a second coat if desired for an even thicker finish. 8. Remove the ribs from the smoker and let them rest for 10 minutes before slicing between each bone. Garnish with chopped peanuts, if desired, and serve immediately.
