Today, I'm taking you to Brittany to visit Aude and Pierric at "Les Gaillardises" farm, where they raise Montbéliarde cattle and produce farm-made yogurt through short supply chains. We'll be discussing the technical aspects: a tandem milking parlor (individual milking similar to a robot), a Bleu-Blanc-Cœur ration rich in omega-3, grazing, grass/corn silage, and fodder beets. Pierric will give us the details of the operation: 65 hectares, 65 cows, 15 hectares of grain, an apprentice, and Florian in charge of the processing. Aude opens the processing workshop to us: no standardization, no homogenization, zero powdered milk; just raw, clean milk straight from the milking parlor. 20% of the milk is transformed into 15,000–20,000 yogurts per week, from buckets for institutional catering to pots for the shop. European health certification, a forward-thinking approach, total transparency: we can see the cows from the workshop. We discover the educational mural “From Grass to Yogurt,” a fantastic school/vocational training project that promotes the profession.
