Baked Chicken Coating (similar to Shake n Bake) 2 cups breadcrumbs 2 tsp sea salt 1 tsp sugar 1 tsp paprika 1 tsp onion powder 1 tsp garlic powder 1 tsp dried basil 1 tsp dried oregano 1 - 3 tsp sage 1/2 tsp black powder 1/4 tsp chili powder 2 Tablespoons cornstarch 1/4 cup oil 4 - 6 boneless skinless chicken breasts Combine all the dry ingredients in a gallon sized Ziploc bag.  zip closed and shake the bag to distribute all the ingredients evenly. Add the oil and shake again so that the oil combines with the dry ingredients until it’s a consistency close to damp sand. Dredge  damp chicken pieces through the coating mixture inside the Ziploc bag. Place the chicken pieces on a foil lined baking sheet. If there is extra coding left over, you may want to sprinkle some of it over the chicken pieces. Bake in a 400° oven. Boneless, skinless chicken breasts will need to bake about 20 minutes or until an internal temperature of 160° to 165° is reached.  Bone in chicken breasts, legs,  or thighs need to bake to an internal temperature of 170°, approximately 45 minutes.  After removing chicken from the oven, allow to rest for 5 to 10 minutes in order for the juices to re-distribute.
