Selfish Cooking Skills Braised Sea Bream (30 minutes) Requirements a. Cut the cleaned sea bream into 5-6cm pieces and split the head in half. Sprinkle with salt. b. Blanch the head and tail, then remove any impurities. c. Place in a pot, season, and cook. d. Once cooked, place on a plate and arrange the shredded ginger (harishoga) and vegetables on the front. Directions 1. 2 cups of dashi stock 2. Prepare the sea bream ① Remove scales, from tail to head ② Cut off the fins ③ Cut the belly and guts ④ Cut the head diagonally and the body straight across Cut to about 5-6cm pieces ⑤ Split the head in half and remove the internal guts ⑥ Cut the body and tail in X-shapes, front and back ⑦ Marinate in 1 tablespoon salt for 10 minutes ⑧ Blanch the head and tail to remove impurities 3. Burdock root - 4-5cm long, cut into quarters 4. Ginger - Thinly slice (harishoga), soak in cold water 5. Shredded chili pepper - Cut into halves, depending on size 6.
