A Bit of History Locro is one of the oldest dishes in South America. Long before the arrival of the Spanish, the indigenous peoples were already preparing stews made with corn, beans, and squash—fundamental ingredients of the Andean diet. Over the centuries, especially during the 18th and 19th centuries, this dish incorporated new ingredients depending on the region and the resources of each family. Beef and pork, sausages, potatoes, sweet potatoes, and traditional hot sauces appeared. However, the first locros were much simpler than they are today. They were cooked with whatever was available: corn, beans, squash, some meat, and a few seasonings. Even ingredients that are common today, such as oil, certain processed chili peppers, or imported spices, were difficult to obtain in many rural areas. This recipe seeks to recapture that original spirit: a humble, nutritious, economical meal meant to be shared around the fire. — 🥣 Ingredients 400 g white beans 300 g cracked or mashed white corn 1 kg beef, cut into cubes 1 large onion 1/2 red bell pepper 3 cloves garlic 1 kg squash (two varieties can be combined) Salt to taste 1 tablespoon paprika 1 teaspoon ground chili pepper 1 teaspoon oregano Water, as needed 👨🍳 Preparation 1️⃣ Soaking The night before, soak the beans and white corn in plenty of water. 2️⃣ First cooking Drain and place both ingredients in a large pot with clean water. Cook for approximately 1 hour, or until they begin to soften. 3️⃣ The Sofrito Meanwhile, in another pot or pan, cook the beef and add the chopped onion, bell pepper, and garlic until browned. Season with salt, paprika, chili powder, and oregano. 4️⃣ Combining the Ingredients Add the sofrito to the pot with the beans and corn. Add the cubed squash and cover with hot water. 5️⃣ Slow Cooking Cook for approximately 30 minutes. Then mix well and continue cooking for another 30 minutes. During this time, the squash will begin to break down naturally, adding creaminess and thickness to the broth. 6️⃣ Resting Turn off the heat and let it rest for at least 10 minutes before serving. This resting period allows the flavors to fully meld and the locro to develop its characteristic texture. How do you prepare it at home?
