Add everything to the Instant Pot except the vinegar and green onions. 2. Stir well. 3. Lock the lid and cook on High Pressure for 18 minutes. 4. Allow a 15-minute natural release, then vent any remaining pressure. 5. Stir in the apple cider vinegar. 6. QUICK PANTRY VERSION – USING CANNED BLACK-EYED PEAS 🥣 INGREDIENTS: • 3 cans (15 oz each) black-eyed peas, drained and rinsed • 1 cup diced onion • 3/4 cup green bell pepper, diced • 2 ribs celery, diced • 2 cloves garlic, minced • 3 cups vegetable broth (veggie, chicken-less, beef-less or a combination) • 1 can diced tomatoes, fire roasted is best if you have them • 1 tablespoon tomato paste • 1 tablespoon soy sauce • 1 tablespoon smoked paprika • 2 teaspoon garlic powder • 1 teaspoon onion powder • 1/2 teaspoon dried thyme • 1/2 teaspoon dried oregano • 1/2 teaspoon black pepper • 1/4 teaspoon cayenne pepper (optional) • 1 teaspoon salt (optional) • 1 tablespoon nutritional yeast • 2 teaspoons mushroom powder (optional) • 1 teaspoon apple cider vinegar (added at the end) • Dice green onions for garnish • Cooked rice, for serving • Hot sauce (optional) 👩‍🍳 DIRECTIONS: 1. Sauté the onion, bell pepper and celery until softened, about 5-7 minutes. 2. Add the garlic and cook for 30-60 seconds. 3. Stir in everything except the vinegar and green onions. 4. Bring to a gentle simmer and cook uncovered for 15 minutes, stirring occasionally. 5. Stir in the apple cider vinegar. 6.
