This delicious Toki Sake has delicate flesh and just the right amount of fat, and is served simply as a piccata. [Toki Shirazu Piccata, Tomato Farci, Sauce Tartare / Recipe] ◆Ingredients ・Tokisake (one slice) ・Egg (1) ・Shiso (3 leaves) ・Parmesan cheese (1 tablespoon) ・Cherry tomatoes (about 5) ・Black olives (about 10 without seeds) ・White wine (50cc) ・Black pepper (to taste) ◆How to make 1) Fillet the tokisake, salt it, and set aside. 2) Beat the whole egg, add chopped shiso leaves and Parmesan cheese, and mix. 3) In a frying pan, saute cherry tomatoes and black olives cut in half in olive oil, then add a splash of white wine and simmer. 4) In another frying pan, heat butter and olive oil, sprinkle salt, pepper, and flour on the tokishirazu, dip it in the egg mixture, and cook the surface until it hardens.
