Today we're in Ronciglione, a small village located in the Tuscia region, on the western side of Lake Vico on the Via Francigena. We're here because today we're taking you on a tour of a restaurant, Rivafiorita. Located on the shores of Lake Vico, Rivafiorita uses excellent local and international ingredients. Its unique feature, besides the breathtaking view of the landscape, is that the recipes have been passed down through generations. From the moment we entered, we were captivated by this place, but once we tasted their cuisine, we couldn't help but dedicate a video to it on our channel. We'll begin the video with a view of the village of Ronciglione, then show you the view of the lake and the restaurant, and finally, we'll taste the dishes together with you. While we were their guests, they were kind enough to show us some of the preparation steps, such as homemade pasta and suckling pig with potatoes cooked in a wood-fired oven. For our appetizer, we chose a fillet of whitefish marinated in pink peppercorns, served with bruschetta and stewed chickpeas. Then came two different first courses, and here we were fascinated by the history of these dishes...just think, these recipes are over 60 years old. The lady told us that her mother, when she was on the lakeshore many years ago, would make the sauce with the whitefish that the fishermen would bring her when they returned from fishing. Then we sampled two different first courses: a fresh tagliolini with whitefish sauce, and a pasta stuffed with whitefish and a white perch sauce. We continued with grilled whitefish and a portion of suckling pig cooked in a wood-fired oven with potatoes! A delight! We finished with a nice coffee and thanked them for the fantastic hospitality and for having eaten so well.
