This documentary takes you on a journey through the traditions and crafts of Zempoala. ⛪️ In the heart of the Hidalgo plateau, among old haciendas, pre-Hispanic vestiges, and railroad memories, lie Zempoala and Zacuala. Two communities that preserve the memory of centuries of history. 📸 The region's former haciendas, such as Casa Grande and El Olivo, recall the era of agricultural and pulque-making splendor. Their ruins, although marked by time, are a testament to the wealth they generated. 🥯 Donkey bread is a traditional bread from Zempoala, Hidalgo, distinguished by its cocol shape, its cheese filling, and its sweet flavor thanks to the piloncillo honey and a touch of anise. It is made with flour, sugar, milk, sesame seeds, and yeast, and is baked in wood-fired ovens that give it a special aroma. Although the recipe originated in Tulancingo, in Zempoala it has become a symbol of local identity and part of Hidalgo's culinary heritage, produced in bakeries like La Guadalupana and consumed fresh from very early in the morning. 🍦 In the center of Zempoala is La Regia, a beloved ice cream shop famous for its ice cream, popsicles, and fresh waters in a wide variety of flavors. Its history dates back to the early 20th century. 🖼️ Thousands of artifacts are housed in the Tonatiuh Community Museum and the Tzacualli Museum: obsidian tools, stone implements, and fossil remains of mammoths and mastodons. 🛤️ Zempoala was a key point in the railway network. Stations like Tepa and Ánimas provided transportation for people and goods, including pulque traveling to #MexicoCity. Today, some have become cultural spaces, while others await restoration as part of the railway's history. Meanwhile, in Zacuala, its community museum shares archaeological finds from the area, bringing history closer to residents and visitors. The former Convent of All Saints, founded in the 16th century, preserves mural remains and an imposing atrial cross on its walls. In the main square, the ancient pillory or roll of Zempoala recalls the viceregal authority and jurisdiction. #Zempoala and #Zacuala are a crossroads of stories: haciendas, convents, museums, and train stations that stand the test of time.
