Your sourdough starter doubles after feeding. It looks bubbly, active and ready to bake with. So why is your bread still flat, dense or inconsistent? The problem is that activity and strength are not the same thing. A starter can rise quickly after a small feed while still struggling to ferment a full bread dough. Doubling tells you that fermentation is happening, but it does not automatically prove that your starter is strong, balanced or ready to produce reliable oven spring.
