Food fraud is a multi-billion dollar business that touches every ingredient, from the cheapest to the most expensive. It's estimated that 10% of what we eat is adulterated. "What we do know for sure is that food fraud is growing exponentially and is becoming increasingly alarming," says a consumer advocate. Criminal syndicates are infiltrating the global food supply chain, undermining consumers' ability to trust what's on the label and what ends up on their plate. In Italy, entire sectors of the food industry are controlled by the mafia. Around the world, well-organized criminal networks are collaborating to penetrate complex supply chains. The scams range from intentionally mislabeling inferior products—passing them off as superior—to substituting one food item for a completely different one. The profits are enormous. But what are the risks for the consumer? How can food fraud be identified? And what can be done to stop it?
