Pandan Durian Glutinous riceπ
Ingredients A 3 cups glutinous rice,soaked for 1 hour and strained 1 cup coconut milk 1cup water 2 pcs pandan leaves 1/2 tsp salt Ingredient B 1 cup thick coconut milk 1 cup durian flesh 4 eggs 1 cup brown sugar 1 cup pandan juice 5 tbsp wheat flour 2 tbsp corn flour Method 1.steam glutinous rice with pandan leaves on steamer for 30 minutes. 2.when ready,put in water,coconut milk mix with salt and stir until well combined.Flatten the glutinous rice into a tray until compact.steam fo another 20 minutes. 3.blend thick coconut milk,eggs,brown sugar,pandan juice,durian flesh and both flours.cook or double-boil the custard for a minutes or until slightly thickens. 4.pour the custard over the pressed steamed glutinous rice base.steam for a futher 30 minutes until the custard sets.Allow to set before cutting.
