Chicken Sticky Rice (Xôi Gà)

Ingredients 4 cups uncooked glutinous rice (aka sweet rice) 1 lb. chicken breasts/thighs 5-6 Shitake mushrooms (dried) 1 yellow onion (sliced) 2 tsp salt 4 tbs oyster sauce 1 tsp black pepper 2 tbs soy sauce oil water Directions 1. Rinse rice with water 2 times or until water is clear. Soak sticky rice in water overnight. Drain water and set aside. 2. Soak mushrooms in water overnight. Drain water. Slice mushrooms into thin strips. Set aside. 3. Cut chicken breasts into thin strips. Set aside. 4. In skillet and on medium heat, add oil to a sizzling hot. Sautee onion, chicken and mushrooms. 5. Add oyster sauce, and soy sauce. Remove from heat when chicken is thoroughly cooked. Mix in black pepper 6. Steam cook sticky rice in a steamer for 20 minutes. Mix in chicken mixture well. Cover and steam for another 15 minutes. Remove from heat, allow to cool. Note: do NOT cook glutinous rice in rice cooker, it will be mushy like pudding
