Minced Prawn Noodle Soup (Bún Riêu)

Ingredients 2 tbs dried shrimp 1/2 lb ground pork 7 oz frozen snails (optional) 1 medium yellow onion (chopped) 1 can whole tomatoes 2 (14 oz) cans chicken broth 1 can mince prawns in spices (tôm riêu) 6 eggs 1 tsp shrimp paste 2 tsp salt 2 tsp sugar water rice noodles bean sprouts Vietnamese coriander (rau răm) cilantros Directions 1) In a pot, bring water to rapid boil & boil rice noodles until soft. Drain noodles & rinse with cold water. Set aside 2) In a bowl, mix together ground pork, tôm riêu and eggs. Set aside. Optional: slice snails into smaller pieces & set them aside 3) In a large pot, add onions, dried shrimp & snails. Stir around until onions start to soften then dump in entire can of whole tomatoes. Crush tomatoes and allow to cook for about 1 minute 4) Add salt & sugar & mix well. Pour in chicken soup and add water. Add shrimp paste & mix well 5) When soups starts to boil, dump in egg mixture (do not stir), close lid and allow to come to a rapid boil. Watch the soup so it doesn't boil over. Once boiling, remove lid 6) Season the soup by adding salt & sugar to desired taste 7) To serve, add noodles to a bowl, scoop in some soup & top with egg mixture. Top with bean sprouts, some rau răm & cilantros. Serve hot
