Harvesting Your Log-Grown Shiitake Mushrooms
Harvesting mushrooms off your logs is easy! The perfect time to harvest a shiitake mushroom is when the cap is still rounded on the edges and curving under, and the white veil underneath has just recently broken. If the veil is still completely attached to the stem and covering the gills, let it go longer. If the cap has flattened out or began to curve up, it is past its prime, but still great to eat! A mushroom at it's prime will taste the best and have the longest shelf life, though shiitake past their prime are still awesome too! Don't forget to subscribe!
