SO DELICIOUS 🔥 Ingredients: For the Rice: Two and a half cups long-grain basmati rice, soaked for twenty minutes Six cardamoms Ten cloves One teaspoon salt Half a teaspoon each of cumin powder, cinnamon powder, and black pepper Three bay leaves Chunks of bell pepper and hot chilies (optional) One teaspoon vegetable bouillon or one cube Three cups water A drizzle of vegetable oil For the Kofta: Ground chicken (650 grams) One grated onion (120 grams, juice reserved) One grated red bell pepper (juice reserved) One-fourth cup chopped parsley Half a cup breadcrumbs (50 grams) One teaspoon each of cumin, coriander, smoked paprika, and salt Half a teaspoon black pepper One egg Half a teaspoon baking soda One tablespoon grated garlic (15 grams) Half a teaspoon saffron soaked in the reserved juices Two tablespoons vegetable oil Olive oil for drizzling For Smoking: One small piece of hot charcoal A few drops of oil Instructions: 1. Prepare the Rice: Soak the basmati rice in water for twenty minutes. Drain and place it in a roasting pan. Add cardamoms, cloves, salt, cumin powder, cinnamon powder, black pepper, bay leaves, bell pepper chunks, chilies, bouillon, water, and a drizzle of oil. Mix well and cover tightly with parchment paper and foil. 2. Make the Kofta: In a bowl, mix ground chicken, grated onion and bell pepper (with reserved juices), parsley, breadcrumbs, spices, egg, baking soda, and garlic. Combine well and chill for thirty minutes. Wet your hands and shape the mixture into small patties. 3. Assemble the Dish: Place the kofta patties on a rack over the rice in the pan. Drizzle the patties with olive oil. Bake everything in a preheated oven at four hundred degrees Fahrenheit (two hundred degrees Celsius) for twenty-five minutes, or until the koftas are golden brown. 4. Add the Saffron Mixture: Mix saffron with the reserved juices and a drizzle of oil. Brush this mixture over the kofta patties. Return the pan to the oven and bake until the rice is fully cooked and fluffy. 5. Smoke the Dish: Heat a small piece of charcoal until it’s red hot. Place it in a small foil cup or directly in the pan, drizzle with oil, and quickly cover the pan to trap the smoke. Let it sit for five minutes. 6.
