Today we're making the legendary Soviet cake "Smetannik"—the epitome of tenderness and childhood flavor. There are many variations, but we'll be making its iconic, basic version—completely made with sour cream, from the crust to the cream. We'll use only time-tested ingredients and a few little tricks.
