Remove from the parchment paper with a spatula after they've cooled completely. It's even BETTER to bake two square baking sheets (30x35 cm) of dough and make a RECTANGULAR cake - it's much easier and faster to prepare 😌 GANACHE: • 75 g dark chocolate • 75 g milk chocolate • 170 g heavy cream (32-38% fat) If using only milk chocolate, reduce the amount of heavy cream to 150 g (milk chocolate is softer than dark chocolate). ⸻ CHOCOLATE SPONGE CAKE: Sift together: • 70 g wheat flour • 50-60 g alkalized cocoa powder (or regular light cocoa powder) • 1 tsp.
