Making Deer Sausage for the FIRST Time! (Part 1) Was Prep, Grind & Seasoning Day

Today was the day… I finally started making my deer sausage for the very first time! It was a long process and a long day—between setting everything up, prepping, trimming and cutting up the venison, pork, and brisket fat, grinding everything, and getting all the seasoning mixed in… my feet and back were definitely feeling it by the end. But I’m excited because everything is officially prepped and ready to go! In Part 1, I: • Set up all my sausage-making equipment • Prepped and cut up deer meat, pork, and brisket fat • Ground everything down • Mixed and seasoned all the sausage Now all that’s left is the fun part… stuffing the sausage and getting it in the smoker!
