In this one we have lots of delicious, nourishing, easy vegan meals along with some failures as well! I love to create these videos to help break down the idea of diet culture. To show you can eat what your body NEEDS every single day. To show there isn't a perfect time to eat, a perfect way to eat, a perfect anything! We need to pay attention to ourselves despite all of the information out there we think we need to follow. What we actually need to follow is ourselves! If you have a hard time nourishing your body it might not be in your nature to crave these types of meals but as you tune into yourself more and start including things your body can thrive off of trust me, you will crave and want them. Taking care of ourselves is not about hitting a certain amount of calories everyday, its about giving yourself what your body needs and wants to feel happy and satisfied! RICE NOODLE RECIPE VIDEO: ( 20:22 - 21:11 ) • what I eat during the week - as an Actual ... ~BROWNIE RECIPE~ 1 1/4 cup sweet potato puree 1/3 cup coconut sugar 1 tsp vanilla extract 2 tbsp melted coconut oil + more for lining a baking sheet 3 tbsp oat milk 2/3 cup oat flour 1/4 + 3 tbsp cocoa powder 1 tsp baking soda 1/8 tsp salt 1/2 cup chunked dark chocolate ( more for topping if you desire! ) Vegan marshmallow ( for topping if you desire, I just had to use them up from camping lol ) Directions: Pre-heat the oven to 325F In a mixing bowl add sweet potato, coconut sugar, vanilla extract, oat milk, melted coconut oil and mix thoroughly Add oat flour, cocoa powder, baking soda, salt and mix well! Fold in dark chocolate Line a 9x6" baking tray with some coconut oil. Add your brownie mix and bake in the oven for 28-32 minutes. ( every oven is different so it might need a touch longer or a touch less.
