Biscoff Rare Cheesecake (15-16cm diameter round cake mold with removable bottom, serves 6-8) -Biscoff biscuits—100g (12 pieces) -Unsalted butter—40g -Cream cheese—250g* Keep at room temperature -Castor sugar—80g -Lemon—1 -Vanilla paste—1/4 teaspoon -Gelatin sheets—3 sheets -Hot water—50ml -Plain yogurt—100g -Double cream—100g Optional grapefruit sauce -Red grapefruit—1 -Granulated sugar—2 tablespoons -Cornstarch—1 teaspoon 1. Place the Biscoff biscuits in a plastic bag and crush them with the bottom of a cup or a rolling pin until they are finely crushed. 2. Melt the butter in the microwave (800w for 20 seconds) and mix with the biscuits. Place in a cake mold and spread evenly on top with the bottom of a cup. Place in the refrigerator to harden. 3. Soak gelatin in cold water. Put cream cheese in a bowl and knead until soft, add sugar and mix. Grate lemon rind and add it, add 1/2 lemon juice (about 15ml) and vanilla paste and mix. 4. Squeeze the softened sheet gelatin tightly and put it in a small bowl, add hot water to dissolve it well. Add to the cheese bowl and mix well. Add yogurt and mix. 5. Put double cream in another bowl and whisk gently. When it becomes a trickle, add it to the cheese bowl and mix. You can mix with a rubber spatula at this time. 6. Gently pour into a cake mold with biscuits and make the surface as flat as possible. Chill in the refrigerator for 3 hours to overnight to harden. 7. Optional grapefruit sauce Scrape off the grapefruit skin with a knife and remove the insides. Tear one of the fruits into about 3 pieces with your hands and place it in a small saucepan with granulated sugar. Bring it to a boil and add cornstarch dissolved in 1 tablespoon of water to thicken it. Allow it to cool and then chill in the refrigerator. 8. Once the cheesecake has set, warm the sides of the cake mold with a hot cloth and place the cake mold on a cup to remove it from the mold. Cut it into pieces and serve with fruit sauce to taste.
