[Rekimeshi], or "Historical Recreation Meals," recreates historical food cultures in the modern age. This time, we've recreated breakfasts eaten by people in the Heian period, Edo period, pre-war Japan, and early Showa period. The Heian period breakfast, where salt was the only seasoning available to ordinary people, emphasized the natural flavors of the ingredients. The Edo period saw the development of food culture and the emergence of various cooking methods. And the Showa era breakfast, a pre-war meal, offers a glimpse into the rich Japanese food culture amidst the turbulent times of the pre-war, wartime, and post-war periods.
