IRANI CAFE GREEN MUTTON KHEEMA INGREDIENTS MAKE A PASTE OF 1 cup of coriander leaves 15 mint leaves 6 green chillies 1 tbsp coriander seeds 1 tsp cumin seeds 2 green cardamoms 5 peppercorns Pods of 1 black cardamom 1 ice cube FOR THE KHEEMA 1 kg kheema with fat ¾ cup of oil 2 tbsp ginger and garlic paste each 6 onions finely chopped 1 tsp turmeric powder Salt to taste 1 cup yogurt whisked 1 tbsp coriander powder 1 tbsp cumin powder 1 cup fresh peas ¼ cup dill chopped 5 slit green chillies 2 tbsp butter 1 tbsp kasuri methi 1 tbsp garam masala Lots of coriander to garnish Fried eggs and pav to serve METHOD: i. Heat the oil and fry the onions till slightly golden ii. Add the ginger and garlic paste and fry for 3-4 minutes iii. Add the kheema and fry further for 15 minutes iv. Add the turmeric and salt and keep frying till the colour changes v. Add the paste and fry further for 5 minutes vi. Add the yogurt, coriander and cumin powder and cook on a low flame for 20 minutes vii. Add the peas, dill and slit green chillies and mix well and cook till the kheema is moist and done viii. Now if you want you can add hot water to make the gravy moist ix. And cook on a low flame till the kheema is done x. Melt the butter and add the kasuri methi and shut the flame let the methi sizzle and then drizzle this on the kheema xi. Add the garam masala and mix well xii.
