Who said making dry, crispy, and golden fried calamari at home is impossible? Today I'm sharing the tricks of Marina, my longtime restaurateur friend. With her experience, success is guaranteed and no spills in the kitchen! Simple Ingredients Fresh calamari, cleaned and sliced Flour or semolina (the secret to an extra-crunchy crust!) High-oleic sunflower oil (perfect for withstanding high temperatures) Tricks of the Trade (Directly from Marina's restaurant) Moisture is your ally (at first!): Wet the calamari well before coating it in flour or semolina. This will ensure the breading sticks perfectly, creating that irresistible shell. Prevent dangerous splattering: To avoid the classic "explosion" caused by the squid membrane, you have two options: coat the squid well with semolina or keep a lid handy during the first few seconds of cooking. Deep oil and a few at a time: Don't crowd the pan! Fry the squid in plenty of hot oil, a few at a time to avoid lowering the temperature. The secret of resting: Once golden brown, drain the squid first on a wire rack and then place them on paper towels. This will allow the steam to evaporate and the fried food to stay mushy.
