Homemade Cassava Flour Beiju 📝 Ingredients: Cassava (macaxeira) Fresh coconut Salt or sugar 🥣 Preparation: Peel and wash the cassava well. Grate the roots on a fine grater as if you were making flour. After grating the dough, squeeze and remove the excess liquid, the starch. Sift the dough. Once the dough is ready, add grated fresh coconut to taste and salt, and mix to make traditional Northeastern Brazilian beiju. Note: To make sweet beiju: you can make the dough only with coconut and add the sugar to the coconut milk and soak the beiju after it's ready, or you can make sweet beiju by adding the sugar to the dough from the start. To bake, spread the dough in a frying pan and let it cook until lightly golden. Tip: Traditional beiju is made from cassava dough, while tapioca is made from tapioca starch. But... Beiju can also be made from tapioca starch. Basically, what defines whether it's beiju or tapioca is the thickness of the dough and the consistency. Beiju is thicker and has a firmer dough, while tapioca is thinner and has a softer dough.
