Cozy Roasted Vegetable Soup - Smooth and Flavourful

šŸŒĀ Turn on subtitles (CC) to get instructions in your language. This easy vegetable soup requires minimal prep time and minimal chopping. Roasting the veggies gives the soup a deep flavour. This silky soup paired with a drizzle of cream and fresh herbs is a perfect healthy and filling lunch or dinner. Ingredients: 500 g potatoes 3 medium-sized carrots 2 sweet red peppers 2 medium-sized red onions 10 cloves of garlic Vegetable oil suitable for frying 1/2 tsp ground coriander 1/2 tsp ground cumin 1/4 tsp red chilli flakes 1/4 tsp fenugreek 600 g ripe tomatoes 2 l water or vegetable stock salt Directions: 1. Chop potatoes, carrots, and onions into medium-sized chunks. Put them in a big bowl. 2. Peel the garlic. 3. Chop tomatoes into medium sized chunks. 4. Cover the veggie mix (from step 1) with oil. Add spices (coriander, cumin, red chilli flakes, fenugreek). Mix. 5. Put the veggie mix onto a baking tray. 6. Cover the garlic with oil and wrap in aluminum foil. Put onto the baking tray. 7. Add tomatoes onto the baking tray. Notes: the veggies should be distributed in a single layer, ideally they shouldn’t touch each other do not add salt now, otherwise the veggies will release too much water and won’t roast well 8. Roast the veggies at 220 C / 425 F with fan on until slightly charred (about 30 min). 9. Once the veggies are done, put then in a big pot (4-5 l), no need to wait until they cool down. 10. Add about 2 l of water or vegetable stock and salt to taste. 11. Bring the pot to a boil and boil for 5-10 mins. 12. Blend the veggies with an immersion blender until silky smooth. 13. Add more water if needed, to adjust the consistency. 14. Boil for another 10 minutes.
