Recipe: Ingredients For the Dal • 2 cups split Daal Mash (washed Daal Mash/Daal Urad) • 2 cups water • 1 tsp ginger-garlic paste • Salt to taste For the Masala • ⅓ cup ghee or cooking oil • 5–6 dried red chilies • 1 tbsp ginger-garlic paste • 2 medium tomatoes, blended into a puree • ¼ tsp turmeric powder • 1 tsp crushed red chili flakes • Salt to taste • ¼ tsp garam masala • 1 tsp crushed black pepper • 2 green chilies, chopped • 1 tbsp fresh coriander, chopped • Sliced Ginger Process Step 1: Prepare the Dal Wash the split daal mash thoroughly under running water. Add the daal to a pot with water, ginger-garlic paste, and salt. Cook until the daal is about 80–90% done - soft but still holding its shape. Drain any excess water and set aside. Step 2: Prepare the Masala Heat the ghee or cooking oil in a pan over medium heat. Add the dried red chilies and fry for a few seconds until fragrant. Add the ginger-garlic paste and sauté until its raw aroma disappears. Step 3: Cook the Tomato Base Add the tomato puree and cook until the mixture thickens and the oil begins to separate from the masala. Mix in the turmeric powder, crushed red chili flakes, and salt. Stir well and cook for another 2–3 minutes. Step 4: Combine the Dal and Masala Add the boiled daal to the masala and gently stir-fry for 3–4 minutes, allowing the flavours to blend together beautifully. Step 5: Final Touch Sprinkle in the garam masala, crushed black pepper, chopped green chilies, fresh coriander and sliced ginger. Mix lightly and cook for another minute before serving. Chef's Tip The secret to a perfect Daal Mash Fry is not overcooking the daal during the boiling stage. The grains should remain slightly firm and hold their shape. This helps the dal absorb the masala while maintaining a wonderful texture instead of becoming mushy. Final Result A rich and flavourful Daal Mash with a fragrant masala coating every grain. The combination of dried red chilies, black pepper, and aromatic spices creates a comforting dish that pairs perfectly with naan, chapati, or steamed rice.
