From preparing the yakhni to the final dum, every step creates a comforting pulao that's beautifully balanced and full of flavour. Every moment matters. ❤️ From the first ingredient to the final bite. 📖 INGREDIENTS Yakhni • 750g mutton • 5 cups water • 2 black cardamoms • 2 tbsp ginger-garlic paste • Salt Rice • 750g Sella Basmati (soaked 1½–2 hrs) OR Regular Basmati (20–25 mins) • 6 cups water • 1 tsp cumin seeds • 1 cinnamon stick • 8 black peppercorns • 2–3 cloves • Salt • Fresh coriander & mint chopped Masala • Cooking oil • 3 round sliced onions • 2 tbsp ginger-garlic paste • 1 cup yogurt • 8-12 green chilli • 1 tbsp chilli flakes • 2 tsp cumin powder • 2 tsp black pepper • 1 tbsp crushed fennel • 1 tbsp crushed coriander seeds • 1 tsp Chinese salt • 1/2 tsp Ground Nutmeg • 1/2 Ground Mace • Salt Whole spices • Cinnamon stick • Black & green cardamoms • Cumin seeds • Black peppercorns • Cloves Green Masala • Tomato • Coriander • Mint • Dried plums • Whole green chillies • Fried onions Dum • 2 tbsp ghee • 1 tsp garam masala • ½ cup reserved yakhni ━━━━━━━━━━━━━━━━━━━━ 👨‍🍳 METHOD 1. Prepare the Yakhni Cook the mutton with water, ginger-garlic paste, black cardamoms and salt until tender. Strain and reserve both the mutton and stock. 2. Boil the Rice Boil water with whole spices, coriander and mint. Add soaked rice and cook until about 80% done. Drain. 3. Prepare the Masala Fry onions until golden and reserve. In the same oil fry the mutton, then add ginger-garlic paste, yogurt, green chilli paste and remaining spices. Cook until the oil separates. Add whole spices, yakhni and finally tomato, coriander, mint, dried plums, green chillies and fried onions. 4. Layer & Dum Spread rice over the masala. Add ghee, garam masala and reserved yakhni. Cover tightly and cook on high heat for 5 minutes, then on low heat (15 minutes for Sella rice or 5 minutes for Regular Basmati).
