Old Fashioned Oatmeal Raisin Cookies: Perfect Crunchy Edges with Chewy Centers - Steph’s Stove

Oatmeal Raisin Cookies 1 cup raisins 3 cups old-fashioned rolled oats ¾ cup all-purpose flour ½ teaspoon baking soda ½ teaspoon fine sea salt ½ teaspoon ground cinnamon ⅛ teaspoon fresh ground nutmeg ¾ cup butter - at room temperature 1 cup packed light brown sugar 1 large egg 1 ½ teaspoons vanilla extract Preheat the oven to 350 degrees. In a small bowl, add raisins and enough warm tap water to cover raisins. Set aside for about 10 minutes to allow raisins to plump. In a separate bowl combine oatmeal, flour, baking soda, salt, cinnamon and nutmeg whisking between each to ensure well combined. Set aside. In a stand mixer fitted with a paddle attachment, blend butter and brown sugar until light and creamy - about 2 minutes. Add egg and mix until no more egg is showing. Add vanilla extract and mix again to incorporate. Slowly add dry ingredients, about ¼ cup at a time, until the dry ingredients have all been added and well combined. Remove the mixing bowl from the stand mixer and scrape down the sides as needed. Drain all of the water from the raisins and gently press to remove any additional water within the raisins. Add the plumped raisins to the cookie dough and gently fold them into the batter. Line a cookie sheet with a silicone mat or parchment paper. Using a 2-tablespoon cookie scoop, scoop out mounds approximately 2-inches apart. Add a small amount of water to the tips of your fingers and press to about ½-inch thickness. Be sure to distribute raisins so all cookies have raisins on top. Bake for 10-15 minutes - depending on your oven; mine usually is perfect at about 12-minutes. The edges will be crunchy and the centers will be soft. Remove from the oven, transfer to a wire cooling rack for 10 minutes, then remove from the cookie sheet, place on a wire cooling rack to cool completely before enjoying. Store cookies in an airtight container for about 5 days in the refrigerator or 3 days at room temperature – if they last that long.
